
Restaurant gastronomique du Château de Courban
Maxime Lesobre, Head Chef at Château de Courban, has been named Grand Chef of Tomorrow 2024 by Gault&Millau.
Born in Paris and the son of butchers, it was after an apprenticeship at Ferrandi that he joined prestigious brigades such as La Grande Cascade, where chef Robert became his chef de cœur, before continuing to grow with the greats such as Michel Rostang, Alain Passard, Jérôme Banctel and Thomas Boulard.
After the confinement, Maxime decided to leave the capital with a clear desire to reconnect with nature.
Last year, he took up the post of chef at Château Louise de La Vallière in Touraine for the opening.
In autumn 2023, he joined the kitchens at Château de Courban and took over the reins on 1 February 2024.
On the menu, in the DNA of Maxime Lesobre's plates - always gourmet - are fish from small fisheries, both freshwater and saltwater, matured on the bone, locally sourced seasonal vegetables and mushrooms, sauces that don't exist anywhere else, infused oils, homemade vinegars and kimchi...
